Pumpkin Dip

Recipe adapted from a recipe found on KOA.com

Ingredients:

  • ¾ c canned pumpkin puree
  • 8 oz cream cheese at room temperature
  • 7 oz marshmallow fluff
  • 1 tsp pumpkin pie spice
  • Graham crackers or apples for dipping

Instructions:

  1. Combine all ingredients and mix until smooth. You may want to use a food processor for this.
  2. Refrigerate until chilled
  3. Serve with graham crackers, apples, pretzels, or anything you want!
  4. This almost makes a great topping for bagels in the morning!

Pumpkin and Apple Soup

Recipe adapted from a recipe found on KOA.com

Ingredients:

  • 2 tbsp butter
  • 2 tbsp olive oil
  • 2 medium onions, diced
  • 1 quart chicken stock
  • 1 sprig rosemary
  • Meat of 1 medium pumpkin or butternut squash, seeded and cut into 1-inch pieces
  • 4 apples, peeled, seeded, and cut into 1-inch pieces
  • Salt and pepper to taste
  • Sour cream

Instructions:

  1. Over a fire, heat the butter and olive oil in your Dutch oven.
  2. Add onions and cook until translucent, 3-5 minutes.
  3. Pour in pumpkin/squash and apples.
  4. Cook for 15 minutes until soft.
  5. Pour the chicken stock in until pumpkin and apples are completely covered.
  6. Stir in rosemary and cover.
  7. Simmer for 20 minutes, or until the chunks are tender and easy to mash.
  8. Mash until smooth or use a food processor to get it really smooth.
  9. Season with salt and pepper and serve topped with a scoop of sour cream!
